Italian Cheese Cake

3 Pounds - (48 oz.) Ricotta Cheese
10 Eggs
2 Teaspoons Vanilla1
1/2 Cups Sugar
2 Teaspoons Lemon Juice

Method of preparation
Blend all above ingredients until smooth Spray a lasagna (aluminum) pan with Pam (spray well)Pre-heat oven to 350 degrees Pour mixture into pan Bake uncovered for 15 minutes then cover with foil Bake an additional 1 to 1 1/2 hours (watch that it does not brown on top)Check with toothpick - when done it should be set but not totally dried out Refrigerate when cool and serve cold
